Quail eggs on avocado and prosciuto

  • 12 quail eggs

  • 1 avocado

  • ½ baguette

  • ½ bunch coriander

  • 175 g cream cheese or mayonnaise

  • 6 sliced prosciutto - halved

  • Capers

  • Chives

  • Salt and pepper to taste


Add a few drops of olive oil to a non-stick frying pan and fry the quail eggs until cooked how you like them.  Remove the cooked eggs from the pan and set aside.

Combine the flesh from the avocado, coriander leaves, cream cheese or mayonnaise in a blender.  Blend until smooth.

Slice the baguette, spread the avocado cream on every slice. Add the prosciutto and the egg and decorate with capers and shives.
