Quail in Pomegranate Sauce

  • 6 quails - deep fried

  • 2 pomegranates - seeds ( if the pomegranates are sour add about 1 tbs of sugar)

  • 1 onion - finely chopped

  • 3 garlic cloves - julienne

  • 10 dried apricots - whole

  • 1/2 cup water

  • 2 tbs oil

  • 1/4 tsp turmeric 

  • 1/4 tsp pepper

  • salt to taste


Deep fry the quails and put them aside on a paper towel to drain.

Take a saucepan and add 2 tbs of oil and caramelize the onion and garlic.

Add the salt, pepper and turmeric and cook for another minute.

Add the apricots, pomegranate seeds, and the sugar if needed and let it cook for a few minutes.

Add the water and the quails and cook for about 5 more minutes.

Serve with rice.
